Ingredients

1 lb 6.5oz bx brownie mix with water vegetable oil and eggs
4 oz cream cheese softened
1/2 cup mashed potatoes room temperature
2 cup powdered sugar
1 tsp pure vanilla
1 cup sweetened shredded coconut
1 cup semi-sweet chocolate chips
1/4 cup salted butter

Instructions

Heat oven to 350 degrees or temperature on package. Prepare a 9x13 inch baking pan with cooking spray or foil.
In medium bowl, combine brownie mix with water, vegetable oil and eggs called for in mix until combined. Pour into prepared pan and bake according to package directions. Cool completely.
In a medium mixing bowl, combine with mixer cream cheese, mashed potatoes, powdered sugar and vanilla until smooth. Stir in shredded coconut. Spread mixture evenly over brownies.
In a small microwavable bowl, combine chocolate chips and butter on high for 30 -60 seconds until melted. Stir to combine. Spread chocolate evenly over potato mixture. Chill for 30 minutes or until set. Cut into 36 bars. Store covered in refrigerator.
