Roasted Potato Stuffing
Ingredients
- 9 potatoes cut into 1⁄2
- 2 tbsp olive oil
- 1 tbsp Chopped fresh sage
- 2 Ribs celery sliced
- 1/4 tsp Red pepper flakes
- 1 Granny Smith apple diced
- 2 Red bell peppers diced
- 1 Small red onion cut into strips

Instructions
- Heat oven to 400 degrees F.
- In roasting pan, toss potatoes with sage, red pepper flakes, and olive oil. Roast 45 minutes or until tender.
- In greased skillet, sauté onions, peppers and celery for five minutes or until tender. Add apples, cook five minutes more. Toss potatoes with veggie mixture.
