  1. In large skillet, heat butter over medium-high heat. Add onions; cover and cook until onion wilts about 6 minutes.
  2. Preheat oven to 375 degrees. Spray a 9-inch square baking dish with no-stick cooking spray.
  3. Arrange half of the potatoes in prepared pan and top with half of the onions.
  4. Season with half of the salt and pepper. Repeat layers.
  5. Sprinkle gruyere and asiago cheeses over top. Gently pour cream over cheeses.
  6. Cover with foil and bake for 20 minutes. Remove cover and bake until potatoes are tender and top is golden brown about 40 minutes.
