Potato Chip Potatoes
Ingredients
- 6 medium russet potatoes peeled and cut into 1/2-inch cubes
- 1 1/2 cup potato chips crushed
- 1/2 Onion chopped
- 2 tbsp Butter melted
- 3/4 tsp salt to taste
- 1/4 tsp Pepper to taste

Instructions
- Combine all ingredients in a large bowl.
- Use salad tongs or hands to toss and combine the mixture.
- Transfer to a shallow, greased 2-quart baking dish and sprinkle top with remaining potato chips.
- Bake uncovered at 350 degrees for one hour or until potatoes are tender.
- When fully cooked, the potato chips on top will be getting golden brown and crispy.
- For added flavor, add shredded cheese on top.
