Mother’s Day Potato Recipes

Mother’s Day is celebrated around the world, and the origins of the celebration are as varied as moms around the world. In the U.S., Julia Ward Howe is credited with being one of the first to suggest recognition for mothers with her pacifist Mother’s Day Proclamation written in 1870.

By 1912, Anna Jarvis had trademarked “Mother’s Day” to be celebrated on the second Sunday of May. Anna started her campaign for Mother’s Day two years after the death of her own mother, Ann, whom had founded Mothers’ Day Work Clubs to treat wounded Civil War soldiers.

Interestingly, Anna despised the commercialization of Mother’s Day and is noted as saying, “A printed card means nothing except that you are too lazy to write to the woman who has done more for you than anyone in the world. And candy! You take a box to Mother — and then eat most of it yourself. A pretty sentiment.”

So perhaps this year you could aim to do something special for your mom — honoring her by doing for her what she typically does for you. Why not a Mother’s Day free of making meals for others! Spoil mom with some tasty, healthy, kid-friendly (in other words, easy for the whole family to make) recipes:
